200 ml almond meal
100 ml oats
2 tsp baking powder
1 tbsp lucuma (optional)
Pinch each of salt, cinnamon and nutmeg
1 tbsp coconut oil (melted)
3 tbsp coconut milk (the solid part)
50 ml almond milk (or any nut milk)
2 small(ish) bananas
A handful of chopped walnuts (or other nuts).
Mix all dry ingredients. Mash the bananas, but leave 1/3 of one whole for decorating. Pour wet ingredients + banana and walnuts into flour mix and stir until a batter forms. Spoon into mini muffin cases and place a banana slice on top of each muffin. Bake at 180 C/355 F for 15-20 mins.
